Biosynthesis The enzyme inositol 4-methyltransferase, which has been characterised from Mesembryanthemum crystallinum and Vigna umbellata, catalyses a methylation reaction in which inositol (myo-inositol) is converted to ononitol. The methyl group comes from the cofactor, S-adenosyl methionine (SAM).
